BACON CHEDDAR POPOVERS

When it comes to bread, I think it’s safe to say that muffins are my favorite. Whether they’re sweet, like these Blueberry Granola Muffins, or savory, like these Breakfast Egg Muffins, or somewhere in between, like these Maple Bacon Pancake Muffins, I’m pretty much always a fan.
And as much as I love eating them, I love making them, too! Because they’re quick…and easy…and nearly impossible to mess up. Which, quite honestly, is the only kind of recipe I really want in my life. (Who’s with me!?)
But every now and then, I get a craving for a different kind of bread. Something more crusty, more airy, less dense. Something like these Bacon Cheddar Popovers!

They’re just as quick and easy and fool-proof as muffins….but with all those other delicious bread qualities that muffins just can’t offer. Like a crusty outside and a light, hollow inside and that airy texture that popovers are known for.
And these Bacon Cheddar Popovers have the added deliciousness of bacon and cheese, which clearly make everything better.
We’ve been enjoying them as a dinner side dish and we’ve especially been loving them for breakfast. Nothing beats a popover fresh out of the oven, and between the eggs and the cheese and the bacon? They’re like a complete meal all in one. Next up on my list? I can’t wait to try these sweet Churro Popovers….yum!

And since I like to keep things simple, you better believe I grabbed all the ingredients for these popovers at my favorite grocery store, Pick ‘n Save. I love that I can always find exactly what I need when I shop at Pick ‘n Save….even if it’s just 6 ingredients!
For this recipe I used Roundy’s eggs, milk, and cheese…because I love the fact that they’re all made right here in Wisconsin. And, of course, I had to throw in a few of my favorite Simple Truth products, as well.
I know I’m not the only one who wants things to be EASY…and shopping at Pick ‘n Save always makes my feel easier.

WHAT IS A POPOVER?

A popover is a light, hollow roll made from an egg batter similar to that of Yorkshire pudding. Popovers are made either in muffin pans or popover pans, which are similar to muffin pans but are taller and have steep-sided wells. This forces the batter upwards and results in a popover with a puffy dome and crispy sides.

CAN YOU MAKE POPOVERS IN A MUFFIN PAN?

Yes. If you don’t own a popover pan, you can absolutely use a muffin pan. Popovers made in a muffin pan will not be as tall as those made in a popover pan.

WHAT CAUSES POPOVERS TO FALL?

There are a number of reasons popovers might fall after being removed from the oven:
  1. Underbaking them. Be sure you bake your popovers for the time indicated on the recipe. Popovers should be well-browned and firm to the touch.
  2. Opening the oven door. Be sure to leave the oven door shut during the first 20 minutes of baking. Opening the door can let in cool air, which can cause popovers to collapse.
  3. Using small eggs instead of large eggs to make the batter can cause popovers to fall.

Ingredients

  • 1 c. Roundy's milk
  • 2 large Roundy's eggs
  • 1 Tbsp. canola oil
  • 1 c. all-purpose flour
  • 1/4 tsp. salt
  • 3/4 c. Roundy's shredded cheddar cheese
  • 6 pieces Simple Truth bacon, cooked

Instructions

  1. Preheat oven to 400°.
  2. Spray the cups of a popover pan or muffin pan with non-stick cooking spray.

  3. In a large mixing bowl, whisk together milk, eggs, and oil. Add flour and salt; whisk until smooth.

  4. Stir in shredded cheese and cooked, crumbled bacon.

  5. Fill popover cups half full.

  6. Bake at 400° for 35-40 minutes, until popovers are firm. Popovers are best when served immediately.
