Oreo Cookies & Cream Blondie Bars

Oreo cookies cream blondie bars are chewy, thick, soft-baked, crispy buttery edges, and loaded with Oreo cookies and cookies & cream chocolate. Everyone will love these delicious dessert blondie bars. 

Many of you start your back-to-school in a few weeks, which I am slightly a lot jealous of! My kids don’t start until after Labor Day. It’s crazy. Last year they started like August 15th but then everyone (aka-only our Governor) decided that school should not start until after labor day from now on. 
He must not have any kids cause seriously summer is so hard with multiple kids. So many different ages and personalities to try and entertain and keep busy. But regardless, we have about 4 more weeks of no schedule and relaxing days and then it’s back to business.

It can get really hot & humid here in Maryland and on days like that we love to bake a fun treat together. These Oreo cookies & cream blondie bars were adapted from these chocolate chip cookie blondie bars and they were a total hit!
We went browsing at Target one day and I saw these Hershey cookies & cream kisses and knew I had to make something with them. And of course we LOVE our Oreos like this Oreo cream pietriple layer Oreo pudding pie, and the ever popular Oreo cookies & cream pudding cookies are some favorites. 
No worries if you can’t find the cookies & cream kisses, just buy yourself a couple of those checkout stand sized Hershey cookies & cream candy bars. Either one will work.


I’ve never been a fan of blondie bars until I found this base recipe. Blondie bars are a buttery, soft-baked cookie bar with crispy edges and they use all brown sugar. Most blondie bar recipes seem to never bake good so you end up with a super soft almost dough-like bar that won’t cut easily.
I promise you that it will not happen with these ones! Let them cool and they will set and cut perfectly. I love how the middle pieces are soft-baked but then the edge pieces are crispy and buttery perfection.
And you can’t ever go wrong with cookies & cream and Oreo. Right?!?

YIELDS 16 BLONDIE BARS
OREO COOKIES & CREAM BLONDIE BARS
Easy, one bowl Oreo cookies & cream blondie bars. Thick, soft-baked, crispy buttery edges, and loaded with Oreo cookies and cookies & cream chocolate. Everyone will love these delicious dessert blondie bars. 
Ingredients
  • 2 cups + 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup (2 sticks) butter, melted and slightly cooled
  • 1 1/2 cups brown sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup coarsely chopped Oreo cookies, reserve some for top
  • 1 cup coarsely chopped Hershey Cookies & Cream Kisses, reserve some for top
Instructions
  • Heat oven to 350 degrees. Spray a 9x13 baking pan with cooking spray and then line with parchment paper. The cooking spray will help the parchment paper stay in place. Or, just use cooking spray.
  • In a mixing bowl combine flour, salt, and baking soda. Stir with a whisk to break up clumps.
  • In a bowl, or bowl of a stand mixer, combine melted and slightly cooled butter and brown sugar. Blend together until combined.
  • Add in 1 egg and then blend. Add the other egg and vanilla extract and blend together until combined.
  • Slowly add in the flour mixture and mix until combined and no flour pockets remain in the batter.
  • Add the Oreo cookies and cookies & cream kisses and stir to combine. Be sure and save about 1/4 cup of each for the top.
  • Dump batter into the prepared pan and spread out evenly. Sprinkle the reserved Oreo cookies and candy on top and gently press down.
  • Bake for 24-26 minutes. The edges will be a light golden brown and be "wrinkly" and the middle will look pale and puffy.
  • Let cool completely and then cut into squares.
Notes
If you can't find the Hershey Cookies & Cream Kisses then use 2 or 3 checkout stand sized Cookies & Cream candy bars.
An easy way to get cooled, melted butter : place butter sticks in a microwave-safe bowl and let cook for 30 seconds, or until you have half melted butter and half not melted butter (still in the stick form). Stir together with a fork until all butter is melted together. This way the butter is not burning hot and it's melted at the same time.
