Pineapple Pico de Gallo Avocado Cups




Ingredients


  • pineapple pico de gallo
  • 4 cups (600g) pineapple, chopped (about 1 medium whole pineapple)
  • 2 cups (300g) tomatoes, chopped
  • ½ (120g) red onion, chopped
  • 1 cup (20g) cilantro, chopped
  • Juice of 2 limes
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • avocado cups
  • 6 avocados, halved and deseeded

Instructions

  1. Add pineapple, tomatoes, red onion, cilantro, lime juice, salt, and pepper in a large bowl and mix well to combine.
  2. Serve inside cut avocado halves with tortillas chips, guacamole, on tacos, or as a garnish on soups. Enjoy!
