CRANBERRY ORANGE QUICK BREAD

When I was trying to come up with my next quick bread recipe, I immediately thought to use cranberry. Since orange is a complement to the cranberry flavor, I decided to put them together in this simple and easy quick bread. Not only is this bread great for breakfast or Christmas brunch, but it’s also such a great gift.

This easy bread is made in just one bowl with a wooden spoon to stir it. That’s it; no creaming or mixer necessary. It’s these kind of recipes I love most, especially during this busy time of year.

INGREDIENTS:
  • 1 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 6 tablespoons SPLENDA Naturals Sugar Blend
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1/2 cup milk
  • 1 tablespoon fresh orange juice
  • 1 teaspoon vanilla extract
  • Zest of half an orange
  • 1 cup dried cranberries



DIRECTIONS:
  1. Preheat oven to 350°F. Spray an 8×4″ loaf pan with nonstick cooking spray.
  2. Whisk flour, baking powder, baking soda, and SPLENDA in a medium bowl. Set aside.
  3. Stir together oil, orange juice, eggs, milk, and vanilla. Stir in dry ingredients just until mixed. Fold in cranberries.
  4. Pour into prepared pan. Bake for 40-50 minutes, or until the loaf is browned and a toothpick comes out clean from the center. Cool at least 10 minutes before removing from pan and slicing.
  5. Best served within 24 hours of making.
